Dinner In A Pumpkin Recipe

Who else loves a good hearty meal to warm up with during the Fall? 🙋‍♀️  I myself have plenty of nostalgic recipes and dishes I love that serve as comfort foods, this being one of them!  We’ve been making this dish for as long as I can remember for our annual family Halloween party!  The original recipe came from a chef featured on TV many years ago.  It has an oriental flair to it.  Each year we take turns baking this dish.  One year my Grandma misplaced her recipe and just made this one up!  She’s an amazing cook!  And it turns out that the family actually favors her recipe to the original now!  So today we are featuring My Grandma’s own Dinner in a Pumpkin recipe!  We hope you enjoy! 😋

First you will need a medium sized pumpkin.  Be sure to see that it fits in your oven.  😉  Sometimes we like to draw a face on the front with a sharpie.  The remaining ingredients are:  yellow onion, green pepper, ground beef, Worcestershire Sauce, Brown Sugar,  Ketchup, Chicken Gumbo Soup, Salt, Black pepper, Liquid Smoke, Chili powder, Dry Mustard, Cinnamon, and Brown rice.

Once the ingredients have been prepared you’ll scoop all of it into the pumpkin and bake!  This is the fun part.  My little Mr. A saw the pumpkin in the oven the last time we cooked this and almost seemed appalled that we could cook a pumpkin.  😂  I guess he’s never seen one cooking before…but more than that, the kids tend to eat the mummy dogs and other delectable fixin’s at the party instead of the dinner in a pumpkin.

Mmmm I can almost smell the deliciousness of this dinner when I see these pictures.   😋 

Allow to cool for a few minutes before scooping out the casserole and pumpkin.  Add a little salt and pepper to the pumpkin and you’re ready to dig in!  Enjoy!

Dinner in a Pumpkin

Dinner in a Pumpkin is the ultimate comfort food during the Fall months! It's healthy, hearty and filling!

  • 1 Medium Yellow Onion diced
  • 1 Green Pepper diced
  • 1.5 lbs. Extra Lean Ground Beef
  • 1 T. Worcestershire Sauce
  • 2 T. Brown Sugar
  • 1/2 C. Ketchup
  • 1 can (10oz.) Chicken Gumbo Soup
  • 1 t. Salt
  • 1/2 t. Black Pepper
  • 1 T. Liquid Smoke
  • 1 t. Chili Powder
  • 2 t. Dry Mustard
  • 1/2 t. Cinnamon
  • 2 C. Brown Rice, cooked
  • 1 medium sized Pumpkin


  • Cut off top of pumpkin, leaving a notch in the lid. Clean out seeds and rinse. Rub salt on the inside of the pumpkin to season. Set aside. Brown ground beef with onions and green pepper. Add Worcestershire Sauce, brown sugar, ketchup and soup, liquid smoke, chili powder, dry mustard, cinnamon, salt & pepper, simmer for 5 minutes to blend flavors. Mix in brown rice. Fill the pumpkin cavity with the meat mixture, top with pumpkin lid. Bake at 425º for 1 hour.


Don't forget to scoop out the sides of the pumpkin while serving this dish!  There's nothing like fresh baked pumpkin in the fall!  Top it with a little salt and pepper and dig in!
