I prefer the taste of black refried beans to pinto, but either is great!
The combination of these two basic ingredients will give this soup recipe a thick and creamy base.
Next you need canned tomatoes with peppers.
For a more zippier soup add tomatoes with chipotle peppers or tomatoes with jalapeños.
But if you’d like a more mild soup, use a can of RoTel tomatoes with diced green chilies.

And the final ingredients in our hearty soup are canned corn and canned chicken breast.
That’s it!

Is the Soup Adaptable for Vegans or Vegetarians
Yes, this soup is suitable for vegans and vegetarians!
In fact, all you need to do is substitute the chicken broth with vegetable broth and leave out the chicken breast.
If you want to up the protein in this soup recipe you may also add a can of black beans.

Easy & Hearty 5 Ingredient Southwest Soup
Ingredients
- 1 3/4 c broth, chicken or vegetable
- 1 15 oz. can refried beans I prefer refried black beans
- 1 15 oz. can tomatoes with chipotle or jalapeño peppers for a mild version use tomatoes with green chilies like Rotel
- 1 15 oz. can corn
- 1 12.5 oz. can chicken breast, drained
Instructions
- Place broth and refried beans in pan over medium heat, stir until beans and broth are incorporated.Add remaining ingredients and heat through.If you like you can drain the corn before adding, I generally add the liquid to the soup.Ladle into bowls. Optional: Garnish with grated cheese, sour cream and tortilla strips.
