Origin of the Mexican Crockpot Pork Loin Recipe
Briefly, let me tell you how I came up with this recipe.
For years I’ve made a crockpot shredded pork or beef using my own homemade salsa recipe.
Of course we loved it and I served it often.

However, I do like to play around in the kitchen.
One morning as I was getting ready to dump in my ingredients for my shredded pork, I thought I’d try a tomatillo salsa verde instead of my homemade salsa.
Well, Steph happened to come over as it was finishing up and wanted to know what I was cooking. She said, the aroma was absolutely delicious!
She had a taste and wanted to know if I had written down what I had done, because it was a “keeper”.
It has now become a family favorite!
The great thing is that I usually have all of the ingredients on hand.
So if it’s a last minute decision to make it, I generally have everything I need.

What You’ll Need for Salsa Verde Crockpot Pork Loin Recipe

I generally use a boneless pork loin. This cut of meat goes on sale regularly at my grocery store and I keep it stocked in my deep-freezer.
The seasonings I use are pink Himalayan salt, garlic powder, chili powder and chipotle chili powder.
In addition, I add a diced onion over the pork. This not only adds flavor, but it also adds moisture. You’ll notice that the only liquid I add is the salsa.
Finally, I top everything with a tomatillo salsa verde. I’ve tried several different brands, and my favorite by far is Kroger’s Tomatillo Salsa Verde.
Place Ingredients in Slow Cooker
All the ingredients are placed in the slow cooker and then let it cook on a low setting for 6-8 hours.

Once the meat has basically cooked all day, you simply need to shred the meat with 2 forks.
For ease in clean-up Steph and I love to use slow cooker bags. They make clean-up a breeze.

Garnish and Serve

I like to garnish the Salsa Verde Pork Loin with lime and cilantro.
It’s too bad you can’t smell the delicious aroma through the screen. Trust me if you love Mexican food, you are going to love this slow cooker pork loin recipe.

Easy Slow Cooker Salsa Verde Pork
Equipment
- slow cooker
Ingredients
- 2-3 lb pork loin roast
- 1 onion diced
- 1 1/2 tsp chili powder
- 1/4-1/2 tsp chipotle chili powder optional, depends how spicy you like it
- 1 tsp salt or to taste
- 1/2 tsp garlic powder
- 3/4 cup tomatillo salsa verde
- lime optional
- cilantro optional
Instructions
- Place the pork loin roast in a slow cooker.Season with salt, chili powders and garlic powder.
- Top with diced onion and tomatillo salsa verde.
- Set slow cooker to low, replace lid. Let cook for 6-8 hours.
- Shred the pork with two forks, serve with rice and beans or in tacos, burritos, quesadillas, enchiladas, burrito bowls or taco salad.Garnish with limes and cilantro.
