Briefly, let me tell you how I came up with this recipe. For years I’ve made a crockpot shredded pork or beef using my own homemade salsa recipe. Of course we loved it and we would have it often.
However, I do like to play around in the kitchen. One morning as I was getting ready to dump in my ingredients for my shredded pork, I thought I’d try a tomatillo salsa verde instead of my homemade salsa.
Well, Steph happened to come over as it was finishing up and wanted to know what I was cooking. She said, it smelled delicious!
She had a taste and wanted to know if I had written down what I had done, because it was a “keeper”.
It has now become a family favorite!
The great thing is that I usually have all of the ingredients on hand. So if it’s a last minute decision to make it, I generally have everything I need.
Another family favorite recipe we love around the holidays is our homemade meatball appetizer with a sweet and tangy cranberry sauce.
Finely chopped and smothered loin with crockpot juices. I had to use Herdes verde salsa 24 oz but is my new favorite taco, served with white and yellow corn and flour street tortillas, Guacamole, Cojita cheese and cilantro.
Was a hit
That makes me so happy to hear you loved this recipe! It’s a favorite at our house. My Latino friends wonder if I have a little Latin heritage. 🤣
My mother taught me well.
