Bean & Lentil Soup Recipe

During the winter months I’m always looking for a good hearty recipe to keep me satisfied and warm! Throw in healthy ingredients and a slow cooker and it has my name written all over it!

If you’re anything like me, on a daily basis, I always feel like I’m running around in every direction to get things done and make sure everyone in our family is taken care of.

It’s exhausting! Then come dinner time I’m often scrambling to get dinner ready.

Slow cooker meals are my favorite! Not only are they delicious, but the freedom it gives me during the day and stress it takes away at dinner time is huge!

Dump and go slow cooker meals are my favorite! They’re so quick and easy!

This bean and lentil soup recipe does have a little prep work, but it’s well worth it in my opinion!

Not only is this recipe loaded with healthy ingredients, but the savory aroma fills our home while it cooks to perfection all day!

Ingredients for Bean and Lentil Soup Recipe

Bean and Lentil Soup Recipe

Ingredients needed:

-onion

-garlic

-thyme

-lentils

-potatoes

-celery

-carrots

-black beans

-chicken broth

-ham bone OR ham steak

Meal Prep

Although this recipe is easy, it does require a little bit of prep work.

First, chop the onion, celery, carrots, potatoes and ham steak into bite size pieces and add to the slow cooker.

NOTE: Alternately a ham bone may be used in place of the ham steak. After cooking all day, pull all the meat off the bones and return to the slow cooker. This method results in a much more flavorful soup.

Next, add remaining ingredients to the slow cooker.

(I always place a disposable slow cooker liner inside the pot before adding any ingredients. This makes clean up such a breeze!)

Finally, add enough water to cover the ingredients (2-4 C. depending on the size of slow cooker). Cook on high for 1 hour, then reduce heat to low and cook for an additional 8-9 hours.

  • Slow Cooker or Instant Pot

Ingredients
  

  • 1 C dried beans washed and soaked or 1 can beans
  • 2 14oz. cans chicken broth
  • 1 tsp thyme
  • 1/2 medium onion chopped
  • 1 stalk celery chopped
  • 1 C carrots chopped
  • 2 medium potatoes (2 C.) diced
  • 1 clove garlic minced
  • 1 C lentils rinsed
  • 1 ham bone or 1/2lb. canadian bacon/ham steak, chopped

Instructions
 

  • Combine all ingredients in a slow cooker. Add 2-4 cups hot water (depending on size of slow cooker). Cover and cook on high 1 hour, reduce heat to low and continue cooking for 8-9 hours.
    To serve, garnish with sour cream

Notes

Using a ham bone will result in a more flavorful soup. After cooking time is finished, remove meat from the bones and discard bones.
