Dinner in a Pumpkin

Dinner in a Pumpkin is the ultimate comfort food during the Fall months! It's healthy, hearty and filling!

  • 1 Medium Yellow Onion diced
  • 1 Green Pepper diced
  • 1.5 lbs. Extra Lean Ground Beef
  • 1 T. Worcestershire Sauce
  • 2 T. Brown Sugar
  • 1/2 C. Ketchup
  • 1 can (10oz.) Chicken Gumbo Soup
  • 1 t. Salt
  • 1/2 t. Black Pepper
  • 1 T. Liquid Smoke
  • 1 t. Chili Powder
  • 2 t. Dry Mustard
  • 1/2 t. Cinnamon
  • 2 C. Brown Rice, cooked
  • 1 medium sized Pumpkin


  • Cut off top of pumpkin, leaving a notch in the lid. Clean out seeds and rinse. Rub salt on the inside of the pumpkin to season. Set aside.
  • Brown ground beef with onions and green pepper. Add Worcestershire Sauce, brown sugar, ketchup and soup, liquid smoke, chili powder, dry mustard, cinnamon, salt & pepper, simmer for 5 minutes to blend flavors.
  • Mix in brown rice.
  • Fill the pumpkin cavity with the meat mixture, top with pumpkin lid. Bake at 425º for 1 hour.


Don't forget to grab a scoop of the delicious pumpkin while serving this dish!  There's nothing like fresh baked pumpkin in the fall!  Top it with a little salt and pepper and dig in!
