Easy Beef and Cabbage Soup with a Kick

Ingredients
  

  • 1 lb. ground beef
  • 1 medium yellow onion diced
  • 4 c. shredded cabbage
  • 3 c. water
  • 1 T. sugar
  • 2 14.5 oz. can diced tomatoes
  • 1 14.5 oz. can diced tomatoes with chipotle peppers
  • 1 14.5 oz. can black beans
  • 1 T. Worcestershire sauce
  • 4 t. chili powder
  • 1 1/2 t. salt
  • 1 1/2 t. ground black pepper

Method
 

  1. Brown ground beef in a large dutch oven or a stock pot. When the ground beef is almost cooked, drain the fat. Add the diced onion and cook 2 to 3 minutes until softened.
  2. Pour water over the cooked ground beef and onion, then add shredded cabbage, sugar and salt. Bring to a boil, reduce heat and simmer for 15 minutes.
  3. Add tomatoes, black beans, Worcestershire, chili powder and black pepper to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes.
  4. Garnish with shredded cheese and sour cream.

Notes

Save prep time, use coleslaw instead of shredding the cabbage.
If you are unable to find diced tomatoes with chipotle peppers, tomatoes with jalapenos will also work. We love the richness and smokey flavor the chipotle tomatoes add to this recipe. 
This recipe is delicious served with a crusty bread.
