- Place broth and refried beans in pan over medium heat, stir until beans and broth are incorporated.Add remaining ingredients and heat through.If you like you can drain the corn before adding, I generally add the liquid to the soup.Ladle into bowls. Optional: Garnish with grated cheese, sour cream and tortilla strips.
Notes
This recipe is very versatile. It can be made without the corn and chicken and it is still a delicious and hearty meal. You can also add a can of black beans for more protein.
