Easy Slow Cooker Salsa Verde Pork

Ingredients
  

  • 2-3 lb pork loin roast
  • 1 onion diced
  • 1 1/2 tsp chili powder
  • 1/4-1/2 tsp chipotle chili powder optional, depends how spicy you like it
  • 1 tsp salt or to taste
  • 1/2 tsp garlic powder
  • 3/4 cup tomatillo salsa verde
  • lime optional
  • cilantro optional

Equipment

  • slow cooker

Method
 

  1. Place the pork loin roast in a slow cooker.
    Season with salt, chili powders and garlic powder.
  2. Top with diced onion and tomatillo salsa verde.
  3. Set slow cooker to low, replace lid. Let cook for 6-8 hours.
  4. Shred the pork with two forks, serve with rice and beans or in tacos, burritos, quesadillas, enchiladas, burrito bowls or taco salad.
    Garnish with limes and cilantro.

Notes

Once the meat is cooked and shredded you can squeeze on a little lime juice. I love the extra hint of lime to my meat.
