Festive Cranberry and Winter Fruit Salad

Cranberry salad with apples, pears, oranges and pecans is bursting with flavor. Heathy and perfect for festive holiday feasts.

Ingredients
  

  • 2 C fresh cranberries, halved washed and sorted
  • 2 apples, cored and diced for a more festive salad add 1 red and 1 green
  • 1 pear, cored and diced
  • 1 orange, chopped
  • 1 C pecans or walnuts, chopped
  • 1/4 C sugar optional, see notes
  • 1 tbls. cinnamon

Method
 

  1. Place cranberries in a large mixing bowl and toss with sugar (optional, see notes).
    Add remaining chopped fruit, nuts and cinnamon. Toss until cinnamon is well distributed.
    Chill for at least 2 hours for flavors to blend.

Notes

Sugar: I use 1/4 cup of regular white granulated sugar for this recipe or 1/4 cup of granulated monk fruit and find it is plenty sweet. It will depend to your liking, you can add more sugar if necessary. If you prefer a tart salad you can skip the sugar all together. That's my personal preference if I making this just for myself.
Apples: To make this salad more festive add 1 green and 1 red apple. My personal preference is a Honeycrisp apple.
Nuts: While you can use pecans or walnuts, I find the salad just as delicious without the nuts.
