How to Make Lemonade Pie

Making this lemonade pie is as easy as it gets!

Start by letting the vanilla ice cream and frozen lemonade sit on the counter for about 30 minutes—just long enough to soften, but not melted.

You want the ice cream to be soft enough to mix in the lemonade, but not runny.

Then, place the softened ice cream and the lemonade concentrate in a large mixing bowl and mix well with a large wooden spoon until the lemonade if incorporated into the ice cream.

If you’re using a stand mixer, attach the flat beater and mix until smooth and creamy.

Next, pour the mixture evenly into two prepared pie crusts.

Freeze for 4 to 6 hours, or until fully set.

Before serving, let the pies sit at room temperature for about 10 minutes so they slice easily.

For our last family party my mom prepared individual pies making her own graham cracker crust in a large muffin pan.

Homemade Graham Cracker Crust

To make your own homemade graham cracker crust place 10-12 graham cracker sheets in a food processor, pulse until it’s fine crumbs.

Next add in 2 T. sugar, pulse again until mixed.

Then pour 1/2 cup of melted salted butter through the feed tube and pulse until well combined.

Place graham cracker crust into two 9″ pie pans, a 9×13 pan or a silicone muffin pan.

Press graham crackers with a glass.

Finally top with lemonade mixture and freeze.

  • 1 12 oz. can frozen lemonade regular or pink
  • 1 48 oz. tub vanilla ice cream
  • 2 9 oz ready made graham or pecan pie crusts

  1. Soften vanilla ice cream and lemonade by placing the containers on the counter for about 30 minutes. You don't want it to be runny, just soft enough to mix in the lemonade.
  2. Place softened vanilla ice cream and lemonade in a mixing bowl. If using a stand mixer attached the flat beater, combine the ice cream and lemonade.
  3. Pour lemonade mixture into prepared crusts. Freeze for 4 to 6 hours, or until fully set.
  4. To serve, bring to room temperature for 10 minutes, cut into slices and serve.
  5. Garnish with a lemon slice and/or raspberries or whipped cream.

Notes

Do not add water to the lemonade, you want to use the concentrate.
If you choose to make your own graham cracker crust, place 12 graham cracker sheets in a food processor and pulse to crush. Add in 2 tablespoons of sugar and pulse. Then pour 1/2 cup melted butter through the feed tube while the processor is running. Mix until well combined.
Make two 9″ pie crusts, one 9×13 pan, or 12 large muffin size pie crust.
Will last uncut for 3 to 4 weeks in the freezer. If cut, wrap in plastic wrap or foil to prevent freezer burn.
Other frozen juices to try: Limeade, Orange, Pineapple.
