I’ve been on a mission to recreate sweet treats I can enjoy without refined sugar, and this refreshing twist on Fresas con Crema is a total win!

Last summer, Steph introduced me to Fresas con Crema, a light and creamy Mexican dessert that’s as refreshing as it is delicious—especially on a hot day.

Fast forward a year, and after discovering that refined sugar was the trigger behind my migraine headaches, I’ve completely cut it from my diet.

That means I’m always on the hunt for ways to reinvent sweet treats I can actually enjoy.

With a little experimenting, I’ve come up with a no-refined-sugar version of Fresas con Crema that’s every bit as dreamy.

I even served it at a recent family dinner and let’s just say… clean bowls and big smiles all around.

How to Make Fresas Con Crema (Keto Version)

To start, add 1 tablespoon of fresh lime juice to 1 cup of heavy cream and place it in the fridge for at least 30 minutes (or up to 2 hours).

While that chills and thickens, wash, hull, and pat your strawberries dry, then slice them.

Once the cream has thickened slightly, stir in the sour cream, vanilla, and powdered Monkfruit until smooth and creamy.

Set aside about ½ cup of the sliced strawberries for garnish, then gently fold the rest into the cream mixture.

Spoon into dessert bowls, top with the reserved strawberries, and serve immediately.

You can store it in the fridge for 2–5 days, but the strawberries will release their juices and soften, which can change the texture.

For the best results, I like to prep the cream mixture ahead of time and chill it—then just fold in the berries right before serving.

Ingredients
  

  • 1 lb. fresh strawberries
  • 1 T fresh lime juice
  • 2 cups sour cream
  • 1 cup heavy cream
  • 3/4 cup powdered Monkfruit
  • 1 tsp. pure vanilla extract

Method
 

  1. Combine heavy cream and lime juice, set in fridge for 30 minutes, or up to 2 hours.
  2. Hull and wash strawberries, pat dry with a paper towel. You don’t want to have any excess moisture on the berries.
    Slice strawberries.
  3. Combine sour cream, powdered Monkfruit, heavy cream mixture and vanilla. Stir until well combined. 
  4. Reserve 1/2 cup strawberries for garnishing and fold the remaining strawberries into the cream mixture.
  5. Spoon strawberry mixture into individual bowls and garnish with strawberries. Serve immediately.
