How to Make Beef and Cabbage Soup
This easy one pot beef and cabbage soup is as simple as it gets—and it’s not only hearty, but healthy too.
All you need is a large pot, a knife, and a cutting board to prep your vegetables, and in no time, you’ll have a comforting, nourishing meal ready for the table.

Brown the Ground Beef and Onions
Heat a large pot or Dutch oven over medium-high heat and add the ground beef.
Browning the beef first adds richness and deep flavor to the soup.
Cook until the beef is almost done, then drain any excess fat.

Add the diced onions and sauté until they’re soft and fragrant, creating a flavorful base for your hearty soup.
Cook the Cabbage
Add 3 cups of water to the pot along with the shredded cabbage and 1 tablespoon of sugar.
Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.

Simmer Tomatoes and Seasonings
Stir in 2 cans of diced tomatoes, 1 can of tomatoes with chipotle peppers, and 1 can of black beans.

Season with salt, pepper, 4 teaspoon chili powder, and 1 tablespoon of Worcestershire sauce.

Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes, allowing all the flavors to meld into a rich, hearty, and slightly smoky soup.

Serving Suggestions
This hearty beef and cabbage soup is perfect on its own for a cozy weeknight dinner, but it’s also great paired with crusty bread, warm cornbread, bacon and cheese bombs or a simple side salad.

Top each bowl with shredded cheese, or a dollop of sour cream for extra richness and fresh chives.
Serve it piping hot and enjoy—it’s so comforting, you’ll want to make it again and again!
Variations & Tips
You can easily tweak this soup to suit your taste or save time.
For a milder version, omit the tomatoes with chipotle peppers and use 3 cans of regular diced tomatoes.

Add a can of corn or swap in a different type of bean for extra variety.
To save prep time, use bagged coleslaw instead of shredding a head of cabbage.
For a different protein, try substituting breakfast sausage or ground turkey in place of the beef.
Storage Ideas
This beef and cabbage soup stores beautifully!
Keep it in an airtight container in the fridge for 4 to 5 days—flavors actually improve overnight.
It also freezes well for up to 3 months; simply thaw and reheat when you’re ready to enjoy a hearty, comforting meal anytime.
